Valentine's Day / Fondue

Fondue Honey FeastBaby, it’s cold outside, Valentine’s Day is around the corner and it’s time to drag out your 1970’s avocado-colored fondue pot and say “Honey-- I love you all over again.” Or, if you’re unfamiliar with this popular food craze of the 70’s, welcome! Fondue is back in full swing. These honey fondues are a perfect way to spend a romantic evening dipping, swirling and twirling in the comfort of your dining room. So grab your fork and start dipping!

Honey Chipotle Fondue (Makes 2 cups)
 

1   lb. Garlic Jack cheese, shredded
2   Tablespoons cornstarch
2/3   cup beer, at room temperature
1/3   cup honey (Mesquite honey, if available)
1-1/3   Tablespoon chipotle in Adobo, finely chopped
2   Tablespoons fresh lemon juice
    Coarsely chopped cilantro, as needed for garnish

Toss cheese with cornstarch to coat; reserve. Bring beer to a simmer. Slowly add cheese a little at a time, stirring constantly, until cheese melts. Stir in honey and chipotle. Sprinkle each serving with cilantro.

Dipping suggestions: Toasted cornbread cubes, strips of lightly toasted flour tortilla, French bread cubes, cooked chicken cubes, avocado cubes, radish flowers, button mushrooms.

Honey Hot Pot (makes 1 quart)
 

1   quart rich chicken stock, lightly salted
1/4   cup honey
1/4   cup soy sauce
2   Tablespoons Asian sesame oil
1   oz. fresh ginger, thinly sliced
1/4   cup fresh lime juice
    green onion, thinly sliced, as needed for garnish
    Dipping sauces, recipes follow

Fondue potIn a fondue pot, combine first six ingredients. Heat broth to a simmer for 10 minutes. Add green onion and bring broth to low boil. At dinner, diners will use a fondue fork to skewer meat/seafood/tofu (choose from suggestions provided) and cook in broth until it reaches desired doneness. Serve cooked meat/seafood/tofu with attached honey dipping sauces.

Note: Cooking time of meat/seafood/tofu will vary depending on portion size and cut. Seafood will cook faster than meat. Cut meat/seafood/tofu into bite-sized portions.

Suggestions - The following items can be cooked in the Honey Hot Pot: thin slices or cubes of beef, pork or chicken; shrimp, scallops or cubes of salmon or tuna; cubes of tofu.

Honey Pineapple Dipping Sauce(for Honey Hot Pot above)

1   cup pineapple chunks
1/4   cup honey
1   teaspoon crushed red pepper
1/4   teaspoon salt

Combine ingredients in blender. Mix well. Remove sauce from blender and serve with Honey Hot Pot as dipping sauce for meats/proteins.

Spicey Honey Mustard Dipping Sauce (for Honey Hot Pot above)

1/4   cup honey
2   Tablespoons Hoisin sauce
1   Tablespoon Dijon mustard

Combine ingredients in small bowl. Mix well and serve with Honey Hot Pot above.

Honey Curry Dipping Sauce (for Honey Hot Pot above)

1/4   cup honey
1/4   cup sour cream
1/4   cup flaked coconut
1   teaspoon curry powder
1   clove finely chopped garlic
1/4   teaspoon salt

Combine ingredients in small bowl. Mix well. Serve with Honey Hot Pot above.

Highland Chocolate Fondue (makes 3 cups)I Love You Honey!
 

1-1/2   cups whipping cream
8   oz. dark chocolate, coarsely chopped
3/4   cup honey
1/3   cup scotch
1/2   Tablespoon vanilla extract

Heat cream, honey, chocolate and scotch over very low heat, stirring frequently, until chocolate is incorporated and coats the back of a spoon, about 5 minutes Stir in vanilla.

Suggestions: Serve with cubes of pound cake, chocolate or angel food cake, pretzels, cubes of fresh fruit or pieces of dried fruit.

White Chocolate Fondue (makes 2-1/2 cups)
 

1   cup whipping cream
12   oz. white chocolate, coarsely chopped
3/4   cup honey
1/3   cup scotch
1/2   Tablespoon vanilla extract

Fondue DessertHeat cream, honey, chocolate and scotch over very low heat, stirring frequently Simmer until chocolate is incorporated and coats the back of a spoon, about 5 minutes. Stir in vanilla.

Serve with: Cubes of pound cake, chocolate or angel food cake, pretzels, cubes of fresh fruit or pieces of dried fruit.
